The morning queue cannot take an extra step
Not one that involves your counter, anyway. A Customer Kiosk stands beside the till showing a QR code that customers scan themselves with their phone camera — no app to download, no card to find, and no staff interaction at all. The queue keeps moving because you were never part of the transaction.
Nobody buys one thing
A box of six, a family with four cones, a Friday order for the office. One generated code carries up to seven stamps or more, chosen at the moment you issue it, so the card reflects what was actually bought rather than counting the same customer once and hoping they don't notice.
The afternoon is the problem, not the morning
Rewards do not have to wait for a full card, and they can carry a date they expire on. A reward that is valid today is a reason to come back at four o'clock, which is the trading hour a bakery actually needs help with — the queue at eight in the morning was never in doubt.
A three-pound basket cannot fund a big reward
It does not have to. A card can be as short as five stamps, and a reward can carry a minimum-spend condition so it only unlocks on a basket worth rewarding. Small and frequent beats generous and unreachable when the average sale is a coffee and a pastry.
A serving window, a market stall and a van are not a shop

Mistakes happen at speed
Six stamps issued when it should have been three, on a Saturday morning, is not a support ticket. Stamps can be removed from the Control Panel as easily as they are added, on the spot, while the customer is still standing there.

The code regenerates on a timer and the old one expires the moment it does, which is what makes an unattended screen safe to leave out — it cannot be photographed on Monday and reused all week.
